Not your traditional #pizza – #FoodieFriday #MFRWauthor #recipe
At our house, Friday is Pizza Night. Usually it’s takeout. Sometimes it’s homemade, though I’ll confess I’ve never tried making pizza dough from scratch and will usually go with a store-bought dough or crust.
But not too long ago I discovered an alternate that’s surprisingly good and oh so easy to make: Zucchini Pizza.
Here’s the recipe I use. You can vary the amount of sauce and cheese to suit your preferences.
Easy-Peasy Zucchini Pizza
Ingredients:
1 zucchini, washed and dried
1/2 cup pasta sauce
3/4 cup shredded mozzarella cheese
Directions:
Preheat oven to 350 degrees.
Grease a cookie sheet – use spray oil or spread olive oil lightly on sheet.
Slice zucchini into 1/4-inch rounds.
Add sauce, then cheese.
Bake until cheese melts and becomes a light, golden brown (approximately 5 minutes).
Remove from oven and let cool for a minute or two for cheese to set.
Enjoy!
That’s all there is to it.
For some options and variations:
You can sprinkle each round with your choices of garlic or onion powder, basil, oregano, or other herbs, to taste.
We’ve also included a piece of raw spinach or a baby spinach leaf on each zucchini round before adding the sauce.
